In Japan they have rice with a raw egg poured in or fish for breakfast. It's only a cultural thing that we have sweet food for breakfast!

I should. Veggies sound weird to eat with breakfast, damn social constructs. I agree with you to a certain extent about juice. I will try adding 2 clementines, and possibly substituting the 8oz of orange juice for 16oz of water. One step at a time.
Main reason I don't eat oranges is the peel tastes bad, but I will eat clementines because very little of the peel sticks to the fruit.
Yeah. I've never really seen the logic in most obsessive NT "rules" when it comes to food/cooking. I've eaten a good many salads doused in hot sauce, stir fries straight from the wok, and meals of an entire head of cauliflower. My personal rule for meals: something I like (vegan, low-calorie) covered in flavors I like (spicy or salty).

Well I have now slightly changed what I plan to have daily for breakfast.
Oatmeal, with 1% milk
4 eggs (no cheese or ham)
8oz of orange juice.
And I feel like I could eat 6 more eggs if I wanted too, so I am not stuffing myself.

And saturated fat is not actually your enemy, high blood sugar is.

Being 10 pounds under the low average weight is probably a pretty healthy place to be. "Slightly underweight" is not "unhealthy." Under weight people who are not grossly underweight have a longer life span and do not usually get the dietary diseases of heart disease, diabetes, stroke, or many cancers. I think as far as what you eat, you should look at your energy needs. Some people are endomorphs which is pretty much "skinny for life." Your age also works into how much you can eat. If you are under about 25 years old, you are still considered to be growing. You need to eat according to your growth needs. After about 25, you need to back off on food. People should eat less than they ate as teenagers when they are adult. This does not happen and leads to obesity.
Anyway, I think you are getting far too much protein and fats (whether saturated or not) meat+eggs=protein powder+milk+ the protein that comes in oats. No one needs to eat more than about 1 tsp of un-saturaded fat per day. Most meat servings have more than this.
I think Delphiki's health class gave a very high percentage of fat. 62.5 grams is a huge amount. I would personally not want to go more than 10-15 grams.
I personally think that you should eat no more than 1/2 to 1/3 cup of oat meal (cooked) and maybe a banana, which is also a good mid morning snack.
I think the advice I have found to help me figure out meal sizes is that you should never eat more per meal than the size of your fist when balled up. That is the size of a healthy -- un-stretched out-- stomach of an average person. For me that is about a measuring cup of something like beans, and maybe a slice of bread. You only need a small amount of protein and/or fat to live, and all plants have a little protein in them. Your daily food should be mostly vegetable matter (like the rolled oats).
Anyway, although I have read a lot about diet, some of what I wrote above are conclusions that come from both reading, advice and experimentation.

I can eat 4 eggs and it feels like nothing. I am not gorging myself, I usually feel a little hungry after I eat what I normally do.
jumbo oats? And the oatmeal doesn't actually look like that much, I just pour in what looks like a good amount then add milk. I only know that it is 3-4x serving size because the 30 serving canister was being eaten in 7-10 days. I will check how much saturated fat and post it. about 4 years ago in health class we did a nutrition unit. It said I was allowed to have 62.5 grams of fat a day. My height and weight are a little higher sense then but I am still about 10lbs under the low average weight.
I looked at the saturated fat content. 4 eggs is 32%, oz of cheese (as a guess) is 25%. The meat (4 slices of ham) was 3%. I will go with out cheese today then, will look into the no yolk

That sounds like an awful lot to eat - the 4 eggs especially. If you're eating meat (and you are) that's way too much saturated fat, if you're going to be eating like this regularly. Egg white is where the protein is, so you could make an egg white omelette. Instead of that huge amount of oatmeal, why not take half that amount of oatmeal (or preferably exchange it for jumbo oats) and add some nuts/seeds/fresh fruit/dried fruit.
