a novation launchpad controller would be nice, and maybe a 11' macbook air so I can make music on public transportation or at the park or to quickly put down ideas while I'm going somewhere.

Vocal, acoustic & elec instrument mics, preamp/ADC box of tricks for pc connection, and have not spent too much money (but not end up with it sounding like someone singing into a tin can) :?

What is not mentioned is how much the capsules will cost, but here's a link to repro M7 capsules that were used in the Original Georg Neumann designs:

Again I don't know the exact price for building either of the above kits, however I think it's safe to say that they will be substantially cheaper than the $10K+ that an original U47/48 or the standard going rate of @ $5K that an AKG C12VR costs or again the $10K+ that an original 1950's era C12 commands.
