that'd be "est" instead of "soyez". Verbs that end with z in french usually are in the second person of the plural form, OR the imperative tense (as if you'd give an order, command or advice), which is the case with "jouez".

But don't you "command" that the music be the food of love? (Yes, I know it's a really abstract concept)

Nope. You "notice" that the music is the food of love. But "play !" is an order.

The translation in english would be: "If music is the food of love, [then] play!"

"is" is the present tense in english, right? Makes sense that it'd be present tense in french as well then. =/

As it's a hypothetical sentence, should the verb be in the subjunctive? Which would be 'soit' I think. The English translation is actually 'If the food of music be love', which I think is the subjunctive.

I don't think it's a poetic form that translates well into french... I'd just need to switch "music" and "love" from places, right?

"Then play" and "play on" mean the same thing.

More or less, the first would be a "conclusion" , if you will, whereas the second would be enjoining you to do so (playing). Anyways, semantics. =/
