This afternoon I ate some of the best bread I have ever eaten. Fresh out of the oven, with walnuts and melty cheese......soft but chewy bread. Warm and not too hot. Tasted like heaven. My mom loved it too. We bought four loaves right away.

California ale yeast.
I thought this type of yeast only existed only in my dreams but it exists! It's a perfectly balanced yeast it really accentuates the malt without it being cloying or sickly and it's not a one trick pony ether it also accentuates the hops!
You will not find a yeast that's more remarkable 
Well if they can make it fluccualate a little better  that would be nice I don't use fining's of any sort. (I like to keep it real yeastie beasties and cloud should not offend real ale drinkers .)
