How do you want them accounted for? That they even exist? Our conscious experience of them?
Emotions are physical things, very much part of our physiology. We feel them with our whole bodies - anticipatory butterflies in our stomachs, the wretched sadness that feels like a hollow in our chest, anxiety that twists our intestines - and, as Tallyman said, we can alter them by consuming mind-altering substances.
I don't think "emotions" fall into any persons classification of "soul." I think the physical body can exist without measurable emotion.

I think 'sufficient evidence' is fine. If it works, I don't see a problem. All the theories and all the maths could at some point turn out to be completely wrong. But until they stop working for humans, I don't see the problem. My starting point is that the universe (in terms of existence) is under no obligation to make sense to us, be it through common sense or our abstract theorising. That it does to the extent it does is remarkable.

You know sometimes, between the dames and the horses, I don't even know why I put my hat on.
The basic issue is that if something doesn't have evidence in it's favor, the default position to hold to it's existence is non-existence. So, I have no evidence of a winged unicorn eating pizza somewhere in Chicago, nothing in my inferences even suggests this is likely the case, so therefore I should not think one exists, and instead default to one not existing. If somebody provides evidence of this being the case, then my opinion on this should shift.

If something cannot be proven or disproved, then is simply have no place in rational inquiry. There is no need to have a 'default' position because such 'thing' never enters the picture to begin with.
