Well, if you have the latest Word, you can select "full screen read" from the View tab. There, you can check "allow writing", and "make font bigger", and that's as spartan as you can get. No toolbar, just you and the empty page :P

Add Fraya's recommendations and you're done :)

Editing RTF directly is a nightmare.

That is what I said. Although a good text editor can use pattern matching to remove the non standard bits, so at least he can use it.

The first thing I do whenever I get new software is tweak the preferences tabs to my specific liking. Most of the time I spent adapting to Word 2003 was removing undesirable options so it would behave like Word 2000. Finally I got so annoyed I had to uninstall it and install Word 2000 again. I won't even consider Word 2007. The changes are calculated to make every task take at least twice longer to complete.
