I really want to make fish fingers and custard, and I was thinking of making little coconut cookies instead of actual fish since I'm vegetarian. Here's my recipes [I found them online and modified them]:

Coconut Cookies
Ingrediments:
about half a cup of organic honey or rice syrup [since I have never made these before, I may adjust the amount later]
1/2 cup of butter
3 [large] eggs
1 teaspoon of vanilla
1/2 coconut flour
1/2 teaspoon of salt
1/2 teaspoon of baking soda
1 cup of shredded coconut [optional]
Oh, and if you stick jam in the middle before baking, you get coconut cookies that look like jammy dodgers!
Directions:
1) Preheat the oven to 375 degrees and butter the baking sheets
2) Cream the butter and the honey/rice syrup. Add the eggs and vanilla and stir a lot.
3) Add the flour, salt, baking soda, and shredded coconut to the wet stuff and mix it really well.
4) Drop the mixture on the cookie sheets and bake for about 8-10 minutes [until the bottoms are golden], then remove the cookies and set to cool.

Custard:
Ingrediments:
2 Eggs
1 teaspoon Vanilla
2 cups of Milk [I will use Rice Milk]
2 tablespoons of corn/rice flour [I hope this is right, since the recipe I found had corn starch, and I'm not using that]
1/3 teaspoon Honey or Rice Syrup or Maple Syrup [possibly more, depending on your tastes]
Directions:
1) Beat the eggs until thick. Combine milk, flour, and honey/rice syrup/maple syrup in a pan until the milk is scalded [remember to stir!]
2) Remove the pan from the stove and slowly add the eggs [be careful not to cook the eggs]. Put the pan back on the stove and cook for about 2-3 minutes until thick.
3) Remove the pan again and add vanilla. Then pour into some kind of container and put in the fridge if you want it cold.

What do you guys think? I'm hoping to make these on the weekend, since April 3rd is officially Fish Fingers and Custard Day for Whovians since that's the day The Eleventh Hour was broadcasted. Hopefully all goes well. :D

^Yay! I'm thinking of making gluten-free jammy dodgers as well. :) I'll post my results on Monday.

Well, I made the custard with arrowroot power tonight, and it tastes delicious! yum yum yum! :D :cheers:

I made extra custard today. Yum yum. :D
Here's another tip for anyone who uses rice milk instead: wait until the milk is getting all filmy on top, and then add the eggs and cook until thick. 8) That way, there isn't a chance of the eggs accidentally cooking and messing the whole thing up.
