All good points, I can't fault the fact you can find holes in theories that are "sacrosanct". Maslow's hierarchy of needs was merely used to illustrate a point but you are right there are plenty of exceptions that his rules/laws don't apply.
For autism the research is a frontier science - whether it be genes, ABA therapy, theory of mind, obsession, sensory overload...many studies put forward theories which can be shown to not apply to all people with autism.
This doesn't mean psychology isn't evidence based. It just means the evidence isn't exactly absolute proof like a math theorem. It just means there is a body of work where there is consensus e.g. psychotherapy improves mild-moderate mental illness is a standard axiom in 1st year psychology textbooks because there is a body of work to support the assertion. But its easy to find examples where psychotherapy is a waste of time.
