I eat celery almost every day. I make a carrot salad with it-- I grate the celery and carrots together in a food processor, then in a bowl mix it with fresh orange and lemon juice, cilantro, black beans, red bell pepper, and cashews.

Cilantro is like a milder form of parsley. The leaves are more tender and the taste is sweeter. But it spoils much faster than does parsley, which tends to dry out as opposed to actually spoiling.
