Just finished my last piece of ginger-carrotcake with lime frosting and crushed pistachios! I really want to make it again because it was sooo delicious but I'm out of powdered sugar and too lazy to go to the store. I know I could make my own powdered sugar with a blender but I don't have one. I wonder if it would be too big of a job to make it with a mortar and pestle :cat:

I made some more and mortar and pestle worked fine! Except that powdered sugar is less sweet than powdering a similar amount of sugar so now my frosting is much more sweet then the previous version which I preferred to this one :P But its still tasty.

A piece of ginger-carrotcake with lime frosting and crushed pistachios and a cup of earl grey :)
