A good and simple dinner that anyone can make, guaranteed

I made this tonight and it's one of my dinners that I make when I don't want to do much actual cooking. It's easier than stuff like Hamburger Helper even. I really like this dish too, and sometimes I make more complicated sides with it, but tonight I only made fettuccine and alfredo sauce with it.

Sausage and peppers

One package pork sausage, not the ground roll sausage or links. It's one continuous piece, about a pound. I use Zeiglers Old Plantation sausage
3 or 4 Bell peppers, you can use green, red, yellow, orange or any combination. I like green and red
3 or 4 Onions - I like using two large yellow Vidalia onions and a large red onion, but any kind is fine
A little olive oil

Slice the sausage into small bite size chunks, put it in a casserole dish. Slice the bell peppers and onions into bite size pieces and put them in on top of the sausage. Pour about 1/8 cup olive oil over all of it, stir it up, cover and bake on 350 for about an hour or hour and a half, stirring every 30 minutes.

That's all there is to it. It's great!

You can even use the leftovers in eggs the next morning. You can also use Italian sausage for this, but I like the Zeiglers Old Plantation the best.

Now if only I can figure out what kind of cookies I want to make for dessert. We are out of everything sweet. I'm thinking chocolate merangue. Anybody want that recipe?

All those peppers and onions wouldn't agree with my poor, acidic tummy... but I'm all for simple one-pot/pan meals! I used to make a really good hash with potatoes, scrambled egg, frozen mixed veggies, ground beef or cut sausage and spices. One pan, easy, tasty. :)

If you mix an egg or two and some cloves in with the sausage before baking, it adds a really nice flavors as well!

My mother sometimes puts cut up potatoes and mushrooms in hers when she makes it.

Another one pot dish that is good is to cut up Roma tomatoes and then any or all of these; bell peppers, onions, mushrooms, black or green olives, yellow squash, zucchini squash, broccoli, cauliflower, green onions - and put in a casserole dish. Add olive oil, minced garlic, and basil. Cover and cook for a while until done (varies depending on what kind of vegetables you have in there) then take the lid off and put on some grated romano cheese (not the canned kind, please) and put back in the oven for about ten minutes.

One more one pot dish, and I think Max could eat this one. It's a breakfast casserole. Either toast some bread or put some biscuit dough (canned or real) in the bottom of a casserole dish. Over that put fried bacon, fried sausage or both, and pour over it 8 beaten eggs with cheese and a little milk. Cover it with foil and put it in the fridge overnight and then cook it in the oven on about 325 the next morning. You can also make it up in the morning and let it sit 30 minutes before putting it in the oven, making it the night before is just a time saving trick. You can also put hash browns in there but I've never done that.
