"Gourmet" is a marketing buzzword. It mean nothing more than an increase in price. Same for "Organic" and "Non-GMO" -- labels that suckers fall for even though there is no nutritional benefit over those foods that lack these labels.
Gourmet: the use of common or uncommon ingredients in a creative or innovative way (in this case, a new way to cook ground beef).
Non-GMO: a label that is placed most often on foods that did not originate from animals or vegetables (i.e., bottled water, sea salt, et cetera). It means only that the ingredients used are not from organisms that have had their genetic material manipulated or altered in a lab. The term is not regulated by the government, but by a non-profit organization called “The Non-GMO Project.”
Organic: Organic-certified cows are required to spend at least four months a year grazing in pastures, their feed is grown without chemical fertilizers, pesticides, or genetically modified seeds, and the cows are not treated with hormones or antibiotics. As for produce, the plants are only treated with fungicides, pesticides, or herbicides that the USDA deems "safe" (yes, organic foods are treated with pesticides).
