Your mum is probably trying to be kind, without realising the problems it's causing you.
I've been living away from my parents for 20 years, and still get this....
Go heavy on the minimalist decor approach; there lots of justifications for this.
you like the look, it's easy to keep clean and tidy, it maximises the light and space you have etc, it makes it easier to move if/when you change job.
Tell her that you wouldn't want to offend her by getting rid of stuff that you don't like, so would rather wait until you find an item that you really like.
some things become a matter of principle. My first house was 3 miles from my parents', so doing my own washing / ironing was paramount for me as all my mum's friends assumed I took it all back every week end...
I accepted the 'homely' gifts for a while as I didnt have enough furniture etc, so used different ones over the years to upgrade older ones.
