Yes, it happens to me all the time and it's annoying. I can not stand it. I don't understand why people have to be so rude.

That's what I do when I am being intentionally tacky... lol.

When I confront them on it is when I am told that I am being rude, crass or arrogant.

I dont think being aggressive or passive-aggressive is the way to go. Realize that this is an issue with many of us. It is quite possible that the other person or people have no idea how else to move a topic along when you are involved.

Personally, when this happens to me, I have been attempting a new tactic. It seems to work rather well, but I am open to any ideas. I just say, "Excuse me, Im sorry. You just interrupted me. Is it that I am boring, overly verbose, offensive... I just want to know so i can better tailor my approach and you can stop trying to talk over me."

Reacting strongly only tends to offend people. Not that I am obove offending people.

NO! There is no excuse I don't talk over anyone so I don't let anyone talk over me !. It is simple and I support what I said, if we don't speak up we would continually get talked over the only way to let people know that what their doing is incorrect is to speak louder when they try to talk over you, this lets them know you are human too and will not be ignored.
