Fundamentally I dont think we will change, well not the majority, I mean how many times have humans faced a crisis and not changed.
From personal experience I think of it like a person having to change their diet to exclude gluten or dairy. There are 2 basic options, rethink their approach to cooking or buy into the "free from", but familiar products. Most will opt for the "free from", and on that note I miss real bread, the free from stuff is not the same.
