Random (boring) fact:
Most chicken eggs impacted by salmonella bacteria are only tainted on the outisde, not the inside. I already knew that, but today I learned that in a small percentage of cases, the bacteria is indeed inside of the shell (this only happens with Salmonella enterica--a species of the genus salmonella). When this occurs, the bacteria are at first only present in small numbers in the white of the egg. As the egg ages, the membrane around the yolk begins to weaken, which releases nutrients that alow the bacteria to reproduce, raising your chances of contracting salmonella, should you eat the egg without cooking it. This is one reason why it is good to store eggs in the refrigerator.
