Bean sprouts are a nice substitute for noodles. I love noodle soup. But, the carbs are bad for me. I am on a low glycemic index diet. Adding bean sprouts to miso broth and sauteed vegetable is pretty close.

Same thing is true for butternut squash. I eat squash instead of potatoes. It is close enough and is a healthy alternative.

Finding a rice substitute was tougher. I use steamed cabbage, but is not the same.

I miss bread, a small rye cracker is not the same.

Never eat beansprouts raw out of the pack.

Your chance of salmonella is as high as raw chicken.

You can put them in boiling water for a minute if you want them to be crisp. Or stir fry.

Sometimes they are cleaned in a solution during production, but you can't take the chance.

It is to do with the environment they are grown in being an excellent incubator,

Yes, Bean sprouts should be steamed, sauteed or blanched before they are eaten.
