I want to eat a diet consisting solely of vegetables and fruits. I know it sounds extreme, but I think I want to do it anyway. I could get carbohydrates from squashes and essential fats from avocados. The only macro nutrient I would be low in is protein. Leafy green vegetables contain all of the amino acids, but not protein in larger amounts. Also, protein is the least important macro molecule we need. When you look at the percentages of macro nutrients our diets should consist of, carbs account for 50%. We should be getting 30% of our calories from healthy fats, and only 20% of our caloric intake should come from protein. Therefore, carbohydrates are the most important, fats are next, and then protein.

Anyway, I just thought I would put this goal of mine out there.

It seems you got it reversed. Both fat and protein are what we call essential macronutrients, carbohydrate is not an essential macronutrient.

A low protein intake will impair your ability to maintain healthy mass, which consist of both muscle and bone mass.
A low fat intake will impact your health in far too many ways to list, and your testosterone will drop to 0.
A low carbohydrate will not do much else than make your body switch energy source(to ketones).

I'm not a low carb advocate, but saying carbohydrate is the most important macro nutrient is pretty silly.

What about nuts, grains, beans? Anyways, there's sesame meal (sesame flour) that's very high in protein.
