well, most people (but not all) are born liking a certain gender or both. but their attraction for other aspects will change. so one aspect is fixed (for nmost people) and the other one will vary over a lifetime. some people can even intentionally change their preferences. so when people say they like a certain type, the evidence indicates it is not something that is fixed and unchanging or genetic or whatever.
Ah, ok. I think I understand you as saying that there is a common experience of people changing color preference, but it is very rare to change gender preference? Empirical evidence. I can accept that. Am still curious about the
why and
how one of those came to be fixed and the other not. Maybe I should just chalk that one up to "humans don't know everything" and move on.

I did just have one other thought though, which is that I can sympathise with the OP wanting someone with a natural hair color. I personally find hair dyes and makeup and perfume to be repulsive in their inherent falseness (paradox: I do like tattoos!). I may not be attracted to people, but I am certainly repelled by some of the things people do to themselves.
So I would think that if one did have a color preference in humans, preferring the honest representation of that would be quite natural. Saying "he should be ok with someone who dyes their hair," in my mind, is like saying "he should be ok when people lie to him to tell him what he wants to hear (or see)."
