I think Ebola+Rabies is better rooted in science.
Ebola is a disease that dissolves the cells of your body, similar to a fagotoxin. It cause giant open sores and bleeding within 2 days of infection and has an 80% mortality rate. The only reason Ebola isn't a massive plaque is the fact it kills within a week and has very obvious symptoms.
Rabies causes insanity and be transmitted through saliva and body oils.
Combine them and you would make an animal a zombie - a rotting bag of flesh that lasts a mere weak before falling apart - literally.
