Damn, that's interesting!
Especially around 1:30 where the slightest smear gets completely picked up and replaced.
The site's unreadable to me - but surely that can't just be a PTFE plate? And it has such a blunt edge too.

Looking carefully at the video, it seems to be a conveyor belt mechanism and not a static plate - there's a thin moving layer being pulled over the plate and it's that which picks things up, and there has to be some reason why it's motorised. Doubtless there's also some special property to the conveyor belt surface.
Translating the web page shows that various food processing-related conveyor belt machinery is that company's specialty.

Still damn clever though.
