I basically sent a thank you letter to the girl I was crazy about in high school over FB because I know it was probably a lot to bear with me because of how much I liked her and I figured over time a lot of girls didn't have themselves together as well as she did, especially since the girl I kissed got pissed at me cuz I told people, lol. And she gave me this response:

Thank Yuhh ! Omg That Was The Sweetest And Nicest Thing That Someone Has Ever Said To Me Even Though Yuhh Were Thanking Me. Reading This Just Brought Me To Tears (Happy Tears) And Made Me Feel So Good Inside That I Wasnt Mean To Yuhh And That I Was Yur Friend And There For Yuhh... I Would Have Never Known That Yuhh Had That, I Thought The Crush That Yuhh Had On Me Was Kinda Cute Really... Yuhh Didnt Have To Thank Me But I Really Appreciate It Hun. Muahhhhhhz Kisses.! !! ! ♥

How should I respond and keep it going?

give a sentence or two in response to her liking your response (i wrote one but then realised i don't even know you so wrting your reply probably isn't a good idea) then ask her a question about something more 'normal' (could be awkward/weird if you dwell on the crush thing too long). like what she's been upto lately, or if you already know then a question about how college/work/whatever is going- something open ended. then you can judge from her response if she's interested in chatting with you (or more) or is just being polite

Try, "You're welcome." Then ask a question along the lines of "How are you?" or "What have you been up to?" The second is probably better since How are you leads to good u? good. And then you have nowhere to go. Ask questions that lead somewhere, and remember, people generally like to talk about themselves.

I just told her you're welcome and then asked how the school had been treating her and mentioned how it made me a changed man(it's the same school she's going to now that I went to last year)
