Funnily enough, the Forum FAQ says you can't change the rank, except by posting. Except, like yourself, I've seen a bunch of custom ranks. Probably, you have to ask a forum Admin to change your rank for you to a custom one.

You can change it when you have 1000+ posts.

Custom titles can be applied by an admin to your name on request when you have reached 1000 posts.
