I don't know what's causing it but for the past few days, I've been ravenous in the evening - like I can't wait for dinner to be ready so I can stuff my face.

Lately I've just been having a cup or two of coffee, non-dairy creamer and two sugars. Possibly a bowl of cereal or cereal/fruit bar.

Lunch will be soup with noodles and vegetables.

Hardly any snacks except for a rice cake with peanut butter.

You don't mention much protein in that list. Protein and some fat are important for satiety, among other things.
